Yummy Tostados

Carl’s Meat Market in Kittery had some Maine Family Farms fresh chorizo, from hogs raised in Maine, and I used some in these tostados for lunch today.

     

I started with a tostados I toasted a bit, just to get them crispy, then added heated Goya refrieds to them. I have found these are the best canned refrieds around, other than homemade. Then the crumbled, cooked chorizo. And queso fundido leftover from Saturday night. Ran all that under the toaster oven broiler a bit to get the cheese gooey again and the topped with shredded lettuce and cilantro tossed with a leftover olive oil, vinegar, herb dressing from a few weeks ago. Good thing I only made three! If I had made more we would have eaten more.

Some Red Chile Chicken, the Roasted Red Peppers with garlic, and the Chile Glazed Maine Shrimp from recent meals, with a lot of the red chile oil. Heated them all up together in the glass bowl together and it was delicious!

You could make this intentionally and put over some grits. Maybe a salad on the side?

Poblano Mac ‘nd Cheese with Crispy Beef

A really excellent lunch.

Based on the Mac and Cheese with poblanos from yesterday.

Took some nice roast beef from the deli counter, sliced for sandwiches, and cut it in strips. Then flash fried in it a bit of olive oil in a CI skillet. Meanwhile warmed a portion of the mac and cheese in the microwave on a plate. Topped with the crispy beef and served.

Delicious!

Might do it with panchetta or proscuito as well.
